200 g Sugar
225 ml water
1 tbsp lemon juice
1 tbsp honey
1 tbsp ginger
½ tbsp ground cloves
Preparation:
- Put the sugar in a saucepan, add the water and stir. Add freshly squeezed lemon juice, honey, ginger and cloves. Stir slowly for a minute. Bring the liquid to a boil and reduce the heat to medium. Reduce heat to low when it starts simmering.
- Simmer for 15 minutes stirring constantly.
- Carefully remove the cloves.
- Allow the mixture to cool at room temperature.
- Place baking paper on the work surface.
- Take a tablespoon, spoon some from the mixture and place on the baking paper.

450 ml water
3 cm ginger root, peeled and finely chopped
3 tablespoons honey
freshly squeezed juice of ½lemon
4 tablespoons gelatine powder

Preparation:
- Put water and ginger in a saucepan and bring to a boil. Reduce heat to medium and simmer for 20 minutes.
- Take a sieve with fine mesh and strain the liquid. Add lemon juice and honey and bring to a simmer.
- Remove the pot from the heat and slowly add the gelatine. Stir until dissolved.
- Grease a silicone muffin mold with olive oil and pour the mixture into the molds.
- Let it sit in the fridge for an hour.
- Remove the chewy sweets from the refrigerator immediately before consumption and leave at room temperature for 2-3 minutes.
- Store in the refrigerator for 2-3 days.

- Reduce the heat and simmer until liquid is reduced to a half.
- Take a sieve with fine mesh and strain the liquid. Add honey stir until dissolved. Simmer for several minutes.
- Add the gelatine slowly and stir until dissolved.
Meanwhile put baking paper on the work surface and pour the mixture. Let it cool for an hour in the refrigerator, then cut into pieces with a sharp knife.
