Preheat oven to 300°F/150°C.

In a large bowl, combine flour, walnuts, sugar, and cardamom. Add the vanilla extract, rose water.

Add the butter in small pieces. With your hands, combine everything together until a coarse dough forms.

Form the dough into small balls.

Place the dough balls on a cookie sheet lined with parchment paper.

Bake for 35 minutes and carefully transfer to a cooling rack to cool slightly.

Place the powdered sugar on a plate for rolling.

When the cookies have cooled but are still warm to the touch, roll the cookies in the sugar until evenly coated.

Return the cookies to the cooling rack and allow to cool completely.

Directions:

Using a mixer, cream together softened butter and sugar until smooth. Add in rose water and vanilla extract.

Whisk together flour and salt. Add dry mixture to creamed butter and mix until well combined. The dough will be slightly dry and a bit crumbly.

Wrap dough in plastic wrap and let chill in the fridge for at least 1 hour or overnight.

Preheat oven to 350°F/180°C.

Allow dough to rest at room temperature for 10-15 minutes to soften.

Roll dough out on a lightly floured work surface to a thickness of 1/4-inch (0,6 cm.)

Use a round cookie cutter, cut cookies and place them on a baking sheet lined with parchment paper leaving 1-inch (2,5 cm) between the cookies.

Bake for 15 minutes until the edges of the cookies are golden brown.

Allow cookies to cool on baking sheet.

When the cookies are cooled to room temperature, melt the chocolate.

Dip half of each cookie into melted chocolate and place on a wire rack. Sprinkle freeze dried raspberry sugar mixture and dried rose petals over chocolate.

Allow chocolate to harden and set before serving.
