  • 24 Shrimp tail on, steamed

Instructions:

  1. Cut eggs in half and remove the yolks.

Instructions:

  1. Put the flour in a mixing bowl, add the salt and stir to mix.
  2. Rub in the butter until the mixture resembles breadcrumbs.
  3. Add the egg and knead to a dough. Form the dough into a ball.
  4. Wrap in cling film and chill in the refrigerator for about 30 minutes.
  5. Heat the oven to 200°C (400°F).
  6. Grease 4 mini quiche tins.
  7. Roll out the pastry on a floured surface and line the tins.
  8. Prick the base for mini quiches with a fork and bake for about 10 minutes until golden.

Filling:

  1. Mix together the cooked ham, onion, peas, chives and garlic.
  2. Whisk the eggs and stir in the cheese and cream.
