4 salmon fillets (skinned)

olive oil – 2 tbsp

butter – 2 tbsp

garlic – 6 cloves (finely chopped)

1 onion (diced)

sun-dried tomatoes – 150 g

cream – 420 ml

baby spinach – 675 g

Parmesan cheese – 50 g

Parsley – 1 tbsp (chopped)

salt

pepper

White wine (dry) – 80 ml (optional)

1 tsp cornstarch mixed with 1 tbsp water, optional

Directions:

Heat the oil in a large skillet. Season the salmon filets and sear in a hot pan over medium heat for 5 minutes on each side. Remove from the pan and set aside.

Melt the butter in the same pan. Add the garlic and fry it for about a minute. Fry the onion in the butter. Add the white wine and let simmer until reduced. Add the sun-dried tomatoes and fry them for 1-2 minutes to release their flavors.

Reduce heat to low and add the cream. Bring to a simmer, stirring occasionally. Season with salt and pepper.

Add in the spinach leaves. Once they change their color, add in the Parmesan. Let the sauce simmer for another minute until the cheese melts. If you want a thicker sauce, you can mix the cornstarch with the water and add it to the pan. Continue to simmer the sauce, stirring until the sauce thickens.

Finally, return the salmon to the pan. Pour the creamy sauce over each piece of fish with a spoon and sprinkle with parsley.
