  • 50 g (1,7 oz) mozzarella cheese

  • 1 egg yolk

  • 100 g (3,5oz) cheese
  • 100 g (3,5oz) mortadella
  • 20 g (0,7oz) chopped pistachios
  • Round cookie cutters – 4, 5 and 7 cm (1,5, 2 and 2,8 inches) diameter

Directions:

Preheat the oven at 200°C/390F

In a mixer, blend the ricotta and mortadella, until it becomes a nice smooth cream.

Unroll the sheet of puff pastry and with a cookie cutter cut out 8 pieces for each size:

  • 8 circles – 7 cm/ 2,8 in diameter
  • 8 circles – 5 cm/2 in diameter
  • 8 circles – 4/1,5 in cm diameter
  • 8 stars

Arrange them on a baking tray lined with parchment paper, spacing them apart because they will swell in the oven, bake in a preheated oven for about 8-10 minutes. Be careful not to let them darken too much.

When ready, take them out of the oven and let them cool completely.

Begin to assemble the Christmas trees starting from the large disk, up to the smallest.

With a pastry bag or a teaspoon, spread mortadella mousse on top of each circle. Finish with a star on top.

Give the final touch by sprinkling with chopped pistachios.

Directions:

Unroll the puff pastry and prepare Christmas-themed cookie cutters. For example, they can be stars, stockings or whatever you want. Use the molds to give the mini pizzas the desired shape.

Arrange everything on a baking sheet, placing the pizzas at a sufficient distance so that they do not stick together during cooking. Cut the mozzarella into cubes and let it dry for half an hour, possibly in the fridge.

At this point, pour a teaspoon of tomato sauce on the pizzas and season with salt and pepper. Place two or three mozzarella dices and a green olive on each pizza.

Directions:

Unroll the puff pastry.

Spread the tomato puree over the entire surface of the puff pastry. Sprinkle with Parmesan and oregano. Add a little finely grated provolone on top.

Place the other rectangle of puff pastry on top. Place the two sheets in the refrigerator for15 minutes so that it is more convenient to cut.

Preheat the oven at190C/375F.

With a knife or a pizza cutter, cut strips of approx. 2 cm/0,8in. and then cut into bites.

Brush the entire surface with egg and milk mixture and bake for about 25 minutes, until golden brown.

Once ready, wait for them to cool before detaching your puff pastry bites. You can also mark the cuts with a knife: in any case your puff pastry bites will not be ruined, as they are pre-cut!

Preparation:

Preheat the oven to 180C/350F.
