For the base:
- 330 g of gluten-free biscuits
- 150 g of unsalted butter
For the cheesecake:
- 450g of mascarpone
- 100 g of icing sugar
- 230 g of white chocolate
- 300 ml of double cream
- 1 tsp. of vanilla extract
- 250 g of raspberries
For the topping:
- chunks of white chocolate
- fresh raspberries
Preparation:
Begin by crushing the biscuits. Then melt the butter in a microwave. Pour the melted butter over the crushed biscuits and mix them. Take out a baking tray and lay out the biscuit and butter mixture. Press them nicely in. Put the tray in the fridge to chill. Now it’s time to make the cheesecake topping! Take the white chocolate and again melt in a microwave. Leave it to cool. For the cheesecake filling, mix the cream cheese, icing sugar and vanilla extract. Then add the double cream and keep mixing until it firms a bit. Now add the melted white chocolate to the mix. Stir. Add the raspberries. Spread the raspberry mix on top of your biscuit base in the tray. Put the tray back in the fridge and leave it overnight. When it’s nicely cooled, decorate with the white chocolate chunks and the rest of the raspberries. Enjoy!
