Gluten-Free Zucchini Bread Recipe
This may sound like an odd pairing to some, but I can assure you that this soft, savory bread is one you’re going to remember for a long time for all the best reasons! It’s incredibly easy to make, so don’t get intimidated if you’re a beginner! Here’s everything you’re going to need:
Ingredients
- 150 grams gluten-free oatmeal
- 50 grams of almond flour
- 200 grams zucchini
- 1 tsp baking powder
- pinch of salt
- 75 grams of coconut yogurt
- 1 tsp cinnamon
- 3 tbsp honey or maple syrup
- 2 eggs
- 50 grams of nuts
- 1 tbsp apple cider vinegar
Instructions
- Preheat the oven to 175 degrees.
- Get a cake bread loaf pan and coat it with baking paper.
- Grate the zucchini in a bowl.
- Chop the nuts and put them in a separate, smaller bowl.
- Mix the oats, almond flour, baking powder, cinnamon, and salt.
- Then, add the zucchini, yogurt, eggs, and honey, or maple syrup and stir until there are no lumps.
- If you want a sweeter bread, add more cinnamon and honey.
- If you want it to be more savory, add chili flakes, pepper powder, or herbs.
- Once your batter is done, pour it into the baking pan and sprinkle some nuts on top.
- Bake for 45–50 minutes.
- Let the bread cool before you slice it up.
