200 g Sugar
225 ml water
1 tbsp lemon juice
1 tbsp honey
1 tbsp ginger
½ tbsp ground cloves
Put the sugar in a saucepan, add the water and stir. Add freshly squeezed lemon juice, honey, ginger and cloves. Stir slowly for a minute. Bring the liquid to a boil and reduce the heat to medium. Reduce heat to low when it starts simmering.
Simmer for 15 minutes stirring constantly.
Carefully remove the cloves.
Allow the mixture to cool at room temperature.

Put water and ginger in a saucepan and bring to a boil. Reduce heat to medium and simmer for 20 minutes.
Take a sieve with fine mesh and strain the liquid. Add lemon juice and honey and bring to a simmer.
Remove the pot from the heat and slowly add the gelatine. Stir until dissolved.
Grease a silicone muffin mold with olive oil and pour the mixture into the molds.
Let it sit in the fridge for an hour.
