- 2 (8-oz.) blocks cream cheese, softened
- 1/2 cup powdered sugar
- 2 tbsp. heavy cream
- 1 tsp. pure vanilla extract
Directions:
Preheat oven to 350º and line a muffin pan with cupcake liners. Prepare red velvet cake batter according to box directions. Divide batter among liners and bake 18 to 20 minutes. Let cool completely. Break 4 cupcakes into small crumbs. Save remaining cakes for another use.
In a large bowl using a hand mixer, beat cream cheese and powdered sugar until light and fluffy. Add heavy cream and vanilla and beat until stiff peaks form.
Line a large baking sheet with parchment. Using a small cookie scoop, scoop cream cheese mixture into balls and place on prepared baking sheet. Transfer to the freezer to chill, 1 hour.
Roll balls in red velvet cake crumbs until fully coated, then return to prepared baking sheet. Refrigerate until ready to serve.

Ingredients:
- 4 tablespoons heavy cream
- 9 ounces white chocolate chopped
- ¼ cup champagne
- 2 cups white candy melts or white chocolate for coating
Directions:
Simmer 1/4 cup champagne in small saucepan until half reduced. Set aside and allow to cool.
Heat heavy cream and chopped white chocolate in a saucepan over low heat until smooth.
Stir in champagne until smooth and creamy using rubber spatula.
Pour into bowl and cover. Place in refrigerator until firm.
Scoop out 1 tablespoon balls of truffles and roll into balls. Place on wax paper.
Place tray of truffles back into the refrigerator to firm up again.

Ingredients:
- 7 oz semi sweet chocolate, finely chopped
- 2/3 cup heavy cream
- 2 tsp light corn syrup
- 1 tbsp unsalted butter
- 19 x 13 pan brownies, baked and cooled, (cakey brownies are recommended–from a mix is fine)
- 1/4-1/2 cup chocolate frosting, prepared
- 28 oz chocolate candy coating
- Edible gold or silver dust
Directions:
Place the chopped semi-sweet chocolate in a medium bowl. Pour the cream into a small saucepan and add the light corn syrup and a pinch of salt. Place the pan over medium-high heat and bring it to a simmer.
Pour the hot cream over the chopped chocolate and let it sit for one minute to soften the chocolate. Gently whisk together the chocolate and cream until melted, shiny, and smooth. Add the butter and whisk it in until combined.
Refrigerate the bowl of ganache for 1-2 hours, until it’s firm enough to roll. Roll the truffles into 32 small balls. Place the truffles on a baking sheet lined with parchment or waxed paper. Refrigerate the tray of truffles.
