6 ounces/170g white chocolate, chopped
1 cup heavy cream
8/220g ounces mascarpone cheese
1 teaspoon vanilla
Put chopped white chocolate and ½ cup of the heavy cream into a microwave safe bowl. Microwave for 30 second increments, stopping and stirring till melted and smooth. Set aside to cool to room temperature.
Whisk the other ½ cup of the cream with the mascarpone cream till smooth. Whisk in vanilla, and add cooled white chocolate.
1 1/4 cups semi-sweet chocolate chips, divided
1/2 cup heavy cream
1 teaspoon coconut oil
Place 1 cup chocolate chips, cream and coconut oil in a medium-sized, microwave-safe bowl.

1 small watermelon
1 small cantaloupe or honeydew melon

Peel the oranges, bananas, and kiwis. Remove the stems from the strawberries. Slice into 1/2-inch.1,2cm thick slices.

1 fresh pineapple, chopped
½ pound/225g green grapes
2 cups chocolate melting wafers

6 ounces/170g key lime pie yogurt
3 ounces/85g Cream Cheese, softened
2 teaspoons sugar
1 tablespoons lime juice
1 tablespoons butter, melted
1 small pineapple, peeled and cored
1 pound/450g large, firm, fresh strawberries
2 large firm nectarines or peaches, fresh, pitted and cut into wedges
Preheat gas or charcoal grill to medium heat.
Soak skewers in warm water for several minutes; drain and set aside.
In a food processor or blender, process yogurt, Cream cheese and sugar. Cover and chill.
In a small bowl, combine lime juice and melted butter. Set aside. Cut pineapple into 1-inch/2.5cm wide slices; quarter slices. Remove hulls from strawberries. Alternately, thread strawberries, pineapple and nectarine or peach wedges on skewers. Brush with butter mixture.

1 pint/470 cape gooseberries, husk removed and rinsed well
1 dragon fruit, peeled and cut into cubes
1 small pineapple, peeled and cut into cubes
1 tablespoon vegetable oil
1/4 cup honey
Zest and juice of 2 key limes
Preheat grill to medium-high.
Thread fruits onto skewers in this order: cape gooseberry, dragon fruit, cape gooseberry, baby pineapple, cape gooseberry, dragon fruit, and cape gooseberry.
Brush all sides very lightly with oil. Grill, turning occasionally, until grill marks are visible or cape gooseberries are charred, then remove to serving plate.
Meanwhile, in small bowl, whisk together honey and half of key lime zest and all key lime juice until well combined.

1 small papaya
8 ounces pineapple

3 tablespoons vegetable oil

1 passion fruit
6 ounces yogurt
3 tablespoons coconut cream
2 sprigs mint
Peel and halve papaya, scrape out seeds and cut into bite-sized pieces. Peel mango and cut pulp into bite-sized pieces. Peel pineapple, halve and remove hard core, cut into bite-sized pieces. Rinse and clean strawberries.
Whisk oil with honey and lemon juice.
Thread fruit on wooden skewers and brush with honey mixture.
Grill on a hot grill for about 5-6 minutes, turning often. Brush with honey mixture.
Prepare sauce. Halve passion fruit and scrape out pulp with seeds. Whisk with yogurt and coconut cream.
