  1. Start by mixing together the two flours with the salt. Set them aside.
  2. In a small bowl, place the yeast, 1 tsp. sugar and the lukewarm water. Set aside until foamy.
  3. Beat the rest of the sugar, egg, vanilla extract and orange zest into the mixture with the yeast.
  4. Now add half of the flour mixture to it. Stir with a fork. Pour in the melted coconut oil while stirring.
  5. Add the remaining flour. Stir dough until it begins to come together.
  6. Prepare a work surface with some flour. Knead the dough until it is smooth and soft. This should take about 8 to 10 minutes. Add more flour if required.
  7. Place the dough in a lightly oiled bowl. Cover it with a plastic wrap. Place it in a warm place to rise until doubled. This takes about 1 1/2 hours.
  8. Roll the dough on a clear surface to 1/4 inch/1/2 cm thickness. Take a round cutter of about 2 inch/5 cm and cut 33 rounds. Cover them with plastic wrap. Leave to rise for 25 minutes.
  9. Turn on the oven and preheat it to 400°F/200°C.
  10. Brush the doughnuts with oil and bake for 8 to 10 minutes. When taking them out of the oven, brush right away with more oil.
  11. Fill the prepared doughnuts with jelly, and sprinkle with confectioners sugar. Serve and enjoy!
