- 1 oz/30g jamon
- 1/4 cup red onion, minced
- 1 clove garlic, minced
- 10 ounce/280g mushrooms, thinly sliced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 2 quail eggs, boiled
- Lemon juice and olive oil
Directions:
Heat the olive oil in a pan, add mushrooms and garlic and sautee for 10 minutes. Season with salt and pepper. Remove mushrooms from pan and set aside to cool.

- Slice the halloumi and grill the slices on the griddle for 3-4 minutes per side until charred, then set aside.
- Put the spinach and half the mint on a large dish.

- 17 oz/480g boneless, skinless chicken breasts

- 1/3 cup extra virgin olive oil
- 1 lemon, halved
- 2 tbsp Dijon mustard
- 1 tsp honey

- To marinate the chicken, place in a large bowl and squeeze over the juice of half a lemon. Add 1 tablespoon olive oil and toss to coat the chicken.

Healthy salad with bulgur, avocado, spinach and cherry tomatoes
Ingredients:
- 1 cup of dry bulgur, cooked as per package instructions.
- 4 cups baby spinach
- 2 cups cherry tomatoes, sliced in half
- 1avocado – peeled, seeded and diced
- 4 tbsp olive oil
- 2 tbsp red wine vinegar
- Salt and pepper, to taste
- Pumpkin seeds, for garnish
