  • 1 cup flour
  • 1 Tbsp white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 Tbps oil

Instructions:

Mix the flour, sugar, baking powder, baking soda, and salt in a bowl, then set aside.

In a second bowl, mix the remaining ingredients.

Pour the wet ingredients into the dry ingredients and mix together.

Scoop about 1/2 cup of mixture and put on the griddle (or waffle maker). Cook until bubbles start to form, then flip over.

  • 6 large eggs, lightly beaten
  • ¼ cup whole milk
  • 1 tablespoon butter
  • 4 large croissants
  • 4 tablespoon mayonnaise

  • 6 slices ham
  • 6 slices cheddar cheese

Instructions:

In a medium bowl whisk together the eggs with whole milk.

Heat butter in a large skillet over medium heat. Add the eggs to the skillet and scramble the eggs, cooking until eggs are thickened and no liquid egg remains. Set aside.

Slice each croissant in half. On one half spread one tablespoon mayonnaise and on the other half spread one teaspoon mustard. Fill each sandwich with egg, ham and a slice of cheese.

Tightly wrap each sandwich in plastic wrap and place in the freezer.

Remove the sandwich from the plastic wrap and place in a paper towel on a microwave-safe dish. Microwave for 1-2 minutes, or until heated through. Alternatively, preheat oven to 450 F/230C. Remove sandwiches from plastic wrap and wrap in foil. Transfer to a baking sheet and bake for approximately 15-20 minutes, or until cheese has fully melted.

  • 6 tortillas
  • 9 eggs
  • 2 cups baby spinach, washed and dried

  • ¾ cup, refried beans, canned

Instructions:

Spray medium frying pan with non- stick spray. Scramble eggs and toss for about 5 minutes, or until eggs are no longer liquid. Add spinach, black olives, sun-dried tomatoes and continue to stir until no longer wet. Add feta cheese and cover until cheese is melted.

Add 2 tablespoon of refried beans to each tortilla. Top with egg mixture, dividing evenly between all burritos.

Grill on panini press or in frying pan until lightly browned.

Wait until cooled, then wrap in parchment paper and freeze.

Heat in microwave for about 2 minutes.

  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 medium bananas, mashed
  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup unsweetened baking cocoa

Instructions:

In a large mixing bowl, beat butter with sugar until creamy. Add egg and vanilla. Add mashed banana.

Add flour, baking powder, baking soda and salt. Divide batter in half.

To one half of the batter, mix in the baking cocoa.

Prepare cupcake tin by greasing with baking spray. Drop 2 Tbsp of plain batter into each muffin. Then 2 tbsp of chocolate batter into each muffin.

Bake in a 350F/280C oven for 20 minutes. Remove and cool on wire rack.

Freeze in a freezer safe container or freezer ziplock bag.

When ready to use, allow to thaw on counter overnight.
