If you want to prepare homemade vegetable broth from leftovers, cut the vegetable scraps into small pieces, put them in a large freezer bag and store them in the freezer until you have filled 2-3 bags. If you use herb stems, cut them and place them in a separate freezer bag. Also, dry them separately in the oven as these will cook quicker. Once you have collected enough vegetable scraps, you should dry them in the oven.

  • Preheat the oven to 190F/90°C.
  • Spread the vegetable pieces on a baking tray lined with baking paper and let them dry in the oven for a few hours.
  • After 1-2 hours you should turn them over.
  • When all the leftovers are dry, chop the vegetable pieces and herbs into powder using a blender or food processor.
  • Add some salt to the powder as you like and place it in an airtight container for storage.
  • Use 1 tablespoon of the powder for 2 cups of water if you want to prepare a clear soup and only 1 teaspoon if you want to flavor creamy soups or stews.
