  • 2 cups (250 g) spelt flour
  • 2 tablespoons baking powder
  • 1/2 tablespoon salt
  • 3/4 (100 g) cups pure cane sugar
  • 3 tablespoons unsweetened coconut flakes
  • 1 cup (200 g) unsweetened coconut milk
  • 1/3 cups (70 g) olive oil
  • 1/2 tablespoon vanilla extract
  • 2 cups (350 g) blueberries (fresh or frozen)

Preparation:

  1. Start by preheating your oven to 350°F  (180°C) degrees.
  2. In a bowl, mix the milk, sugar, vanilla extract and the olive oil. Stir well, until the sugar is dissolved completely.
  3. In a separate bowl, add the spelt flour with the baking powder, coconut flakes, and the salt.
  4. Now pour the wet mixture to the dry one and stir well. Try to not over mix them, if you want your muffins soft and tender.
  5. You have to add the blueberries into the batter and mix again.
