Ingredients for 12 muffins:
Calories per serving: 157 kcal
- 2 cups (250 g) spelt flour
- 2 tablespoons baking powder
- 1/2 tablespoon salt
- 3/4 (100 g) cups pure cane sugar
- 3 tablespoons unsweetened coconut flakes
- 1 cup (200 g) unsweetened coconut milk
- 1/3 cups (70 g) olive oil
- 1/2 tablespoon vanilla extract
- 2 cups (350 g) blueberries (fresh or frozen)
Preparation:
- Start by preheating your oven to 350°F (180°C) degrees.
- In a bowl, mix the milk, sugar, vanilla extract and the olive oil. Stir well, until the sugar is dissolved completely.
- In a separate bowl, add the spelt flour with the baking powder, coconut flakes, and the salt.
- Now pour the wet mixture to the dry one and stir well. Try to not over mix them, if you want your muffins soft and tender.
- You have to add the blueberries into the batter and mix again.
Now, all you have to do is fill in the muffin forms that you have. You can do that with a spoon or an ice cream scoop, if you have one. Place them in the oven and bake or 25 to 30 minutes. You can enjoy with your family for a lovely breakfast!
