  • 2 bags of frozen raspberries
  • 2 tablespoons of fresh lemon juice
  • a packet of unflavored gelatin
  • 2 tablespoons of sugar
  • 3 cups of heavy cream

Raspberry Mousse Preparation – Directions

Step One

Leave ¼ cup of water into a bowl and put gelatin on the top. Leave the mix to soften. 

Step Two

Mash raspberries and then strain them into another cup or bowl in order to eliminate the seeds. This will be around 1 ⅔ cups of purée. Next, add lemon juice and sugar. Make sure that the sugar is dissolved.

Step Three

Leave the gelatin in a microwave for about 30–40 seconds. Set aside ¼ cup of raspberry purée and put gelatin onto the remaining purée. 

Step Four

Whip the cream until it is stiff enough, and fold in a third of the raspberry-gelatin mix until it is incorporated. Drizzle the remaining purée onto the mousse and fold twice.

Step Five

Put the mousse into glass bowls and leave it into the fridge for about 3 hours before serving!
