Low-Carb Vegan Raspberry Mousse – The Perfect Summer Dessert to Add to Your Keto Diet!
Do you ever crave a fresh, fruity dessert after a long day at the office, with the kids, or just living life in general? It’s true what the folks say – there is ALWAYS room for dessert! However, I tend to think twice about that once I see my muffin top peeking through. So what’s the cheat code? For me, it’s this low-carb vegan raspberry mousse that hits JUST the spot every single time!
How to Make a Low-Carb Vegan Raspberry Mousse?
There are countless reasons why I love making and eating this dessert! First off – it’s dairy, gluten, and sugar-free! It’s super low-calorie, and takes ONLY 5 minutes and 5 ingredients to make! This recipe is for 2 servings, so none of the mousse is going to waste! Oh, and did I mention that it’s absolutely delicious?! Don’t worry, I am not one to gatekeep! Here’s how you, too, can prepare it in just a few simple steps!
Ingredients
- 200 grams of fresh raspberries
- 300 grams of silken tofu
- juice from 1/2 lime
- coconut sugar or another keto sweetener to taste
- almond milk
- vanilla extract (optional)
Note: Instead of tofu you can add 1 avocado.
Preparation Instructions
- Add the raspberries, tofu and lime juice to a blender and mix them.
- After that, add the keto sweetener of choice, and as much almond milk as necessary until you get a creamy texture.
- Once you’ve mixed all the ingredients, you can add 1/4 vanilla extract to boost the flavor.
- Give the mixture one last blend.
- Let the mousse rest in the freezer for 15 minutes.
- Once it’s chilled, garnish it with fresh raspberries and it’s good to serve.
Note: To achieve the softest and lightest consistency of the mousse, it’s best to use the highest possible speed of your blender!
