Asian-Style Pulled Pork Rice Bowl – Quick Instant Pot Dish to Bring the Whole Family Together!

I don’t know about you, but whenever I think about comfort food there are two things that come to mind – rice and meat. Recently I’ve been playing around with one of my dear friend’s go-to recipes for quick rice bowls and it’s SO good it would be a crime not to share! Instant Pot Pulled Pork Rice Bowl Recipe
The main tool you’re going to need in order to prepare this Asian-style rice bowl with tender puller pork meat is an instant pot. It allows you to cook this meal quickly which makes it convenient for any time of the day! Here are the ingredients you’re going to need:
Ingredients (for 2 servings):
- 600 grams of pork shoulder
- 1 tbsp honey
- 20 grams of coconut oil
- 1/2 tbsp powdered paprika
- a pinch of ground clove
- a pinch of nutmeg powder
- 1/2 tbsp ground coriander
- 1/2 tbsp ground cumin
- salt to taste
- 1/2 tbsp ground pepper
- 100 ml pineapple juice
- 200 ml chicken broth
- 125 grams long grain rice
- 1 scallion
- 1 stalk green coriander
- 1 tbsp fried onion flakes (optional)
- 2 tbsp BBQ sauce
- gravy to taste
Instructions:
- Rinse the meat and pat it dry.
- Cover the meat with honey.
- In a bowl mix the paprika powder, cloves, nutmeg, coriander, cumin, and salt and pepper to taste.
- Rub the mixture into the meat.
- Add the coconut oil to the instant pot and turn it on the Sauté function.
- Once the pot is heated, add the pork and cook it for 10–15 minutes.
- Remove the pork from the pot and place it on a big plate.
- Clean the Instant Pot.
- Add the pineapple juice and chicken broth with the pork back into the pot.
- Cook on Manual high-pressure mode for 1 hour.
- Pour water into a pan.
- Add rice and salt.
- Wash the scallions and cut them into small rolls.
- Rinse and chop the coriander leaves.
Plating
Once the pork is cooked, take it out in a dish and use two forks to break it into small pieces. To plate:
- Mix the pulled pork with some gravy.
- Add the scallions, coriander, and fried onion.
- Arrange the rice in a bowl.
- Place the pork on top.
- Finish off by drizzling BBQ sauce.
