  • 2 eggs that are lightly beaten
  • 4 cups of shredded zucchini
  • 2 tablespoons of olive oil
  • sour cream (for serving purposes)
  • 2/3 cup of flour
  • 1/3 cup of sliced scallions

Crispy Zucchini Fritters Preparation – Instructions

Step One

Sprinkle the zucchini with salt and leave them for about 10 minutes. Squeeze out the liquid from the zucchini and put them into a large bowl.

Step Two

Add eggs, flour, scallions, 1/4 teaspoon of salt, 1/8 teaspoon of pepper to the bowl. Stir in order to mix all ingredients.

Step Three 

Add some olive oil to a large pan and when it gets hot enough, put 3 tablespoons of the zucchini paste. Press it in order to create a round and cook the fritters for about 3 minutes. Next, flip them once and wait until they get golden brown. When ready, sprinkle the fritters with a salt.

Step Four

Now, your zucchini fritters are ready to be served with sliced scallions and sour cream (according to your preferences).
