- 2 eggs that are lightly beaten
- 4 cups of shredded zucchini
- 2 tablespoons of olive oil

- 1/3 cup of sliced scallions
Crispy Zucchini Fritters Preparation – Instructions
Sprinkle the zucchini with salt and leave them for about 10 minutes. Squeeze out the liquid from the zucchini and put them into a large bowl.
Add eggs, flour, scallions, 1/4 teaspoon of salt, 1/8 teaspoon of pepper to the bowl. Stir in order to mix all ingredients.
