Preheat oven to 300°F/150°C.

Separate the egg whites and the egg yolks in different mixing bowls.

With an electric mixer, start beating the egg whites until super bubbly.

Add in cream of tartar and beat until stiff peaks.

  • 4 eggs
  • 4 slices bacon
  • 1 tbsp white vinegar
  • 1tsp chives

Hollandaise Sauce:

  • 2 egg yolks
  • 2 tbsp butter
  • 1 tsp lemon juice
  • Pinch of salt

Instructions:

Prepare Hollandaise sauce. Separate 2 eggs and whisk the yolks in a glass bowl until they have doubled in volume. Add a squish of lemon juice.

Set about an inch of water into pot to simmer.

Melt the butter.

Place a glass bowl on top of the simmering water and start whisking the egg yolks. They will become thicker the more you whisk.

Pour in the melted butter slowly whisking constantly.

The hollandaise sauce should be thick enough to coat the back of a spoon when lifted out.

When the sauce is done, remove it from the heat and leave aside. Season with salt.

To poach your eggs, set a pot with about 3 inches of water to boil.

Once the water comes to a boil, reduce temperature to low, so that water is simmering and a tablespoon on white vinegar.

  • 4-6 ounces cheddar cheese, grated
  • Vegetable oil
  • Salt and pepper

Instructions:

Prepare cloud bread.

Make the burgers by weighing 4 ounces of meat and rolling it into a ball. Do this with the remaining meat.
