As you know, you can store the meat in a refrigerator for 3-4 days, which means that you can prepare the soup a day or two after the holidays. And the best? You do not need to do any shopping, as the products are available at any pantry. Some people say that “zero-waste” is a trend, we say it’s common sense! So, let’s get to business!

These Are the Ingredients for Your Leftover Turkey Soup:

  • 2 cups leftover turkey, shredded,
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 small carrots, chopped
  • 1 cup celery, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • A handful of noodles
  • Fresh parsley, chopped

Instructions:

  • In a pot, heat the olive oil over medium low heat. Add the onion, garlic, carrots and celery and cook until the vegetables are tender, about 10 minutes.
  • Add the broth, cover the pot and cook on medium low heat for 10-15 minutes.
  • Add the noodles, stir and cook until ready.
  • Add the turkey meat to the pot and cook for 5 minutes.
  • Divide into bowls, sprinkle with fresh parsley and serve.
