When I was little, I used to love Summer, because I knew that going to my grandma’s house, there was always homemade corn! She used to grow corn in her garden and for me nothing tasted better. This recipe that we are about to show you, includes corn, which is in season right now. And if you want to make it taste good, you have to find homegrown corn. If you don’t grow it yourself, check the farmer’s market. Now, these delicious vegan tacos are easy to make and they include corn and beans salad and our favorite guacamole, which we are also going to make from scratch. Let’s get started!

Ingredients for The Corn and Beans Salad for 4 Tacos:
- 4 ears of corn
- 1 can black beans (rinsed and drained)
- 2-3 small jalapeño peppers (minced)
- 3 tablespoons lime juice (freshly squeezed)
- 1 tablespoon olive oil
- 4-5 cherry tomatoes (optional)
- salt and pepper to taste
- 1 small red onion (minced)
- 2 garlic cloves (chopped)
- 1/2 tablespoon cumin
- 1/2 tablespoon dried oregano
- 1 cup (15 g) fresh cilantro (chopped)
- Red and yellow bell peppers (optional)
Ingredients for The Guacamole for 4 Tacos:
- 2 avocados (peeled and pitted)
- 4-5 cherry tomatoes (chopped)
- 1 small red onion
- 1 tablespoon garlic powder
- 1/2 tablespoon paprika
- salt and pepper to taste
- 2 tablespoon lime juice (freshly squeezed)
How to Prepare Vegan Tacos with Corn and Beans Salad?
- Start by preparing the corn first. Grab the 4 ears of corn, peel them and put the corn in a pan and let it boil for 40 minutes (if it is fresh). After that, take it out from the pan and pour cold water on it to stop the process. Once cold, shave the corn kernels and place them into a bowl.
- Add the ingredients for the salad and mix well with the spices.
- Prepare your guacamole by peeling the avocados and smashed them nicely in a bowl. Add the rest of the ingredients and mix well.
- Take the corn tortillas and put the guacamole first. Add the salad, and enjoy!
