Strawberry Glaze:

  • 180 grams butter, soft
  • 200 grams icing sugar
  • 1-2 drops red food colouring
  • 70 grams fresh strawberries, chopped
  • 1 tsp. vanilla extract

Preparation:

  • Preheat the oven to 180 °C/ 356 °F, and line a heart-shaped baking tin with baking parchment.
  • Beat the egg yolks, butter, icing sugar and chocolate in a large bowl with a hand mixer until smooth.
  • Beat the egg whites with 1 pinch of salt in a separate bowl for 3–4 minutes until stiff. Stir in the sugar. Beat in sugar.
  • Add half of the beaten egg whites to the chocolate mixture and mix well.
  • Slowly add the almonds and wheat flour to the remaining beaten egg whites and stir with a wooden spoon.
  • Add the flour mixture to the chocolate mixture and stir until smooth.
  • Pour the batter into the baking tin and bake for 55–60 minutes.
  • Leave to cool completely.
  • Meanwhile, for the frosting, beat butter in a bowl with a hand mixer for 1–2 minutes until creamy.
  • Add remaining ingredients to the bowl and beat for 2–3 minutes until you get a homogeneous mixture.

Preparation:

  • Preheat the oven to 180 °C/ 356 °F and line a large baking tray with baking paper.
  • Melt the butter and chocolate in a bain-marie or microwave and pour the mixture into a large bowl.
  • Stir in the sugar, eggs, espresso powder, vanilla and salt and mix well.
  • Add the flour and stir until smooth.
  • Pour the mixture onto the baking tray and smooth it out.
  • Bake for 20–25 minutes and leave to cool completely.
  • For the buttercream, cook the raspberries in a small saucepan over a medium heat for 4–5 minutes, stirring frequently. Strain through a sieve.
  • Add the raspberry juice to the saucepan again and simmer until the juice is reduced by half.
  • Beat the butter with a hand mixer for 2–3 minutes until creamy. Add the remaining ingredients and mix until smooth.
  • Cut out 24 hearts from the pastry with a cookie cutter and spread half of them with the buttercream.
  • Place the remaining hearts on top and press together lightly.
