Fluffy Vegan Raspberry Muffins – A Healthy Comfort Food Dessert for the Whole Family!

Whenever I’m in the mood for indulging in comfort food, the first dessert that always comes to mind is a muffin! The only downside – I’m lactose intolerant! Understandably, I had to find a way to satisfy my cravings with a more healthy alternative that doesn’t wreak havoc in my stomach! This recipe for vegan raspberry muffins has become my signature family dessert – here’s how it can be yours, too!

How to Make Fluffy Vegan Raspberry Muffins?

There’s something about a muffin’s fluffiness and soft texture that brings me so much joy with every bite. What I love about this particular raspberry muffin recipe is that it gives you a classic taste and texture minus the calories! Also, as I mentioned above, it’s the perfect little treat for my fellow lactose-intolerant readers! Here’s how you make it:

Ingredients:

  • 1 cup whole wheat flour
  • 115 grams of brown sugar
  • 1 teaspoon baking powder
  • a pinch of salt
  • 120 ml oat milk
  • 60 ml no-sugar applesauce
  • 30 ml melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1 tbsp lemon juice
  • 240 grams raspberries
  • Demerara sugar to sprinkle on top

Instructions:

  1. Oil up a 6-cup muffin pan.
  2. Preheat the oven to 400 degrees.
  3. Pour the flour, brown sugar, salt, and baking powder into a cup and mix them together.
  4. As you’re stirring, add the oat milk, coconut oil, vanilla extract, and lemon juice until you get a homogeneous mixture.
  5. Use a spoon to take 2–3 scoops of the batter and form small balls.
  6. Place the raspberries into each ball before you put it into the pan.
  7. Once placed in the pan, bake for 20–25 minutes.

Once the time is up, sprinkle the Demerara sugar on top, let the muffins cool for 10 minutes, and then indulge away! When stored in an airtight container, the muffins should be good for up to 3 days. If you’ve made a bigger batch, place them in a plastic container and pop them in the freezer!
